Let’s talk pickles! They’re one of things everyone seems to love… and their popularity constantly seems to be growing. Anything that can be made dill pickled flavored will be, and the pickle lovers among us are here for it.

Take, for example, my Dill Pickle Pinwheels. A simple recipe that’s literally always a hit… orr my Air Fryer Pickles… because everything that’s good is even better fried!

This Dill Pickle Coleslaw is no exception and has quickly become our absolute FAVORITE side dish! Between the sliced pickles, the fresh dill, the shredded cheese, and the French fried onions, it’s a flavor explosion in every bite. And pickles are the star of the show.

This coleslaw makes a delicious addition to any meal and is especially perfect for summer picnics and barbecues. Best of all, it’s ready in about 10 minutes and easy to make ahead for stress free entertaining.

Coleslaw mix – The base of this recipe is one bag of tri-color coleslaw mix, which is a mixture of green cabbage, red cabbage, and carrots. You can also substitute thinly sliced cabbage and matchstick carrots in place of packaged coleslaw mix.

Mayo – Mayo gives this coleslaw the creaminess it needs. I used 3/4 cup of Hellman’s mayo, but you can feel free to use any brand or variety you have on hand. You can also substitute Miracle Whip if you prefer.

Pickle juice – 3 Tablespoons of pickle juice, combined with the mayo, gives this coleslaw an extra pop of pickle flavor. As a substitute, you could use white vinegar or lemon juice.

Dill pickles – This recipe wouldn’t be complete without pickles, and I used 1/2 cup of sliced petite dill pickles. I prefer the petite size for both flavor and texture, and they make the perfect slices for this coleslaw. You can use any size you have in your fridge.

Cheese – I used 1 cup of shredded colby jack cheese in this recipe, which adds both delicious flavor and color to the salad. You can substitute, cheddar, monterey jack, swiss, provolone, or mozzarella in its place. You can also feel free to omit the cheese to make this dairy-free.

Fried onions – Crispy French Fried Onions aren’t just for green been casserole… they’re also delicious in this coleslaw! I used 1/2 cup for just the right amount of crunch.

Green onions – 2-3 sliced green onions add delicious flavor to this recipe. They can easily be omitted or substituted with another type of onion.

Fresh dill – Last but not least, 1 Tablespoon of fresh dill gives this coleslaw the perfect balance and tangy flavor. You can substitute 1 teaspoon of dried dill in its place.

Mix the mayo and pickle juice. In a small bowl, whisk together the mayo and pickle juice until smooth.

Prep the pickles, green onions, fresh dill, and colby jack cheese. Slice the pickles and green onions, chop the fresh dill, and shred the colby jack cheese as desired.

Combine all ingredients in a large mixing bowl. Combine all the ingredients in a large mixing bowl and mix well to combine.

Garnish and enjoy. Transfer to a serving bowl and garnish with additional fresh dill as desired. Enjoy!

  • 14 ounce bag 3-Color Coleslaw Mix
  • 3/4 cup mayo
  • 3 Tablespoons pickle juice
  • 1/2 cup sliced dill pickles
  • 1 cup shredded Colby Jack cheese
  • 1/2 cup French Fried Onions
  • 2-3 sliced green onions
  • 1 Tablespoon fresh minced dill
